Green Salad Recipe Challenge : The Not So Green Salad

This is a recipe from my Blog optimized exclusively for this challenge.

It’s that time of the year when everyone gets the flu. Luckily there are tons of cabbages right now at the market. We Germans make our famous Sauerkraut from those. They are high in vitamin C which boosts your immune system, so you want to eat lots of them! My seven year old son does not eat green things. He does, however, eat brown, white or red things, even if they crunch and taste like vegetable. So this salad is perfect to bolster his immune system during winter. Let's get started.

  1. prepare 1/2 white cabbage by cutting off thin slices and placing them in a big bowl
  2. add 1 onion, cut into thin slices
  3. add 1 apple, cut into thin slices

Be careful with that onion. Depending on size and type it can make the salad quite hot.

  1. add salt (1 teaspoon)
  2. add apple vinegar (1 tablespoon)

Now you need to knead the salad-to-be thoroughly until everything is soaked well and getting soft. Leave alone for at least 30 minutes.

  1. add hacked parsley (1 tablespoon)
  2. add hacked walnuts (1 handful)
  3. add maple syrup (1 tablespoon)
  4. add walnut oil (1 teaspoons)
  5. add ground cumin to taste (1 teaspoon)
  6. add cinnamon to taste (1 pinch)

Stir well and there you have it: a tasty salad from cheapest ingredients, most of them in region and season. At least where I live. You can serve the salad right away. I like it even better the next day when flavors have combined nicely over night.

Sounds delicious! I love apples and cabbage together. My boyfriend is Polish, so it's always a treat to get homemade sauerkraut from his mother. 😀

It really depends on what kinds of fruits there is in it :) But why not only make a fruit salad :D So yummy :D

I like that recipe. It's hella weird tho - apples with onion and cabbage.. Looks like fuel for the gas factory down there!

On the other side, I enjoy experimenting with food like that - not always eating it tho'. :P
