Carrots are one of the most widely used and enjoyed vegetables in the world. Carrots are a vegetable commonly enjoyed in both raw and cook form. Here I want to share you a very easy and quick and healthy recipe which is made by carrot.

3/4 cup all-purpose flour
1/2 cup whole-wheat germ
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/3 cup olive oil
1 cup brown sugar
2 teaspoons cinnamon (depending on taste)
250 g carrots (about 3 -4)
2 egg, lightly beaten
1 teaspoons vanilla extract

Preheat oven to 375 degrees F (190 degrees C). Lightly grease muffin pans, or use paper liners.Whisk flours, wheat germ, cinnamon, baking powder, baking soda, and salt in a bowl. Whisk remaining ingredients in a separate bowl. Fold dry ingredients into wet and mix until just combined. In a separate bowl, whisk eggs with sugar, prepared formula, oil and vanilla. Pour egg mixture over flour mixture and stir gently. Add carrots and stir just until mixed. Mix until batter is moistened. Fill muffin cups 4/5 full.

Bake for about 20-23 minutes or until a skewer inserted into the centre comes out clean. cool in a pan for 20 minute.
They can also be frozen so you have these healthy snacks on hand – just wrap each muffin individually to keep them fresh.
