Hello steemians.
Once again its a great pleasure for me to share with you this favorite dish of mine which when ever i eat it, reminds me of home.
I am from Cameroon principally from the grasslands of Bamenda in the North West Region.
'Quacoco' as it is called is a locally prepared dish which requires lots of time and patience to prepare it. But the end result is always the best.
Growing up, my mom will cook this every sunday very early in the morning before we go to church.
Back in bording school, my grand mom always cooked and brought it during visiting days. I could eat like 5 bundles and never get tired😂.

Due to the crisis we have here in the North West and South west of Cameroon, we have been displaced to towns where having the means to cook such isn't as easy as back then.
So i decided to cook it myself to make me remember home.

It's monday which is a ghost town in Bamenda, i was home and decided to cook it.
It is cooked using cocoyams and eaten with any type of sauce, preferably pepper sauce.
Cocoyam is mostly cultivated in africa and consumed by mostly poor farmers.
But due to its popularity and nutrient quality, its been consumed in every part of the world.

Method of preparation

Carefully peel your cocoyams and wash in a bowl..

Use a gratter or any machine you have to grind the cocoyams. Be careful not to harm your self while doing so.

Place in a bowl and add oil, maggi, salt and dry fish.

Mix very well so that the ingredients can spread round it.

Harvest plantain leaves and warm on fire to make them soft. Then start tiring in small quantities in place them carefully inside a pot.

Pour in some little water in the pot and stand on fire for a minimum of 45 minutes.
After that open and check.
Your Quacoco would have been ready for eating.

Fry your sauce with pepper and enjoy yourself 😋😋😋😋.
You'll never regret eating it

What the best time to always look back. Your mother checked you in school and brought you that. That really feels like home.

They are really good old days. She knew how much I loved it.
Till date i love her so much for that.
