I Miss Comfort Foods Sometimes.......

Being on this grainy, veggie, fruity kind of diet makes me miss heavier foods sometimes. I was having a bad week well, we all kinda were. I needed comfort food, and I needed it like, NOW! I set out to find recipes of vegetarian recreations of comfort meals. There really weren't a whole lot, so I dreamed this one up. It worked!

Southern Fried Seitan with Mashed Potatoes and Gravy

1-2 pkg.              Ancient Grains Chik Product or 1/2 lb. Block of Seitan 

1 1/2 c.                Kimmy's Chicken Coating (See below)

2                           Free Range Eggs or 1/2 c. Egg Substitute for Vegan

6 Medium          Organic Potatoes

1 Tbsp.                Butter or Substitute for Vegan Butter

1/2 c.                   Milk

1 pkg.                   Organic non-GMO Corn

1 Container        Veggie Gravy/ Or Veggie Broth Thickened with Corn Starch (Recipe below)

2 c.                       Organic Canola Oil for frying

Kimmys Chicken Coating

1 c.                       Flour

2 Tbsp.                Garlic Powder

1 Tbsp.                Sea Salt

1 Tsp.                  Paprika

1 Tsp.                  Black Pepper

Stir together with fork to mix all ingredients.

Instructions for Chicken

Place deep skillet on stove and add organic canola oil. Heat until water sizzles in pan. Dip seitan or ancient grains strips in whisked egg or egg substitute. Roll in chicken coating. Re-dip in egg again, and re-roll in coating once more. Lay in hot oil and deep fry for about 3 to 5 minutes each side. Remove and allow to drain on paper towel. Peel and cube potatoes and boil till soft. Mash with mixer or potato masher and add butter. Sprinkle with some sea salt to taste and stir in milk. Arrange potatoes and fried seitan on plate with a serving of corn. Drizzle with veggie based gravy and serve. 

Veggie Gravy

In one cup of COLD milk or substitute, dissolve 2 Tbsp. Corn Starch and stir well. Heat 2 cups veggie broth on stove. When broth is bubbling, slowly whisk in Corn Starch/milk mix. Heat and stir constantly until desired thickness. You can add a dash of tumeric for more intense yellow color. I swore mine was chicken gravy haha!

Ahhhhhh Relief!!!!!

I couldn't believe how easy this was. The only expense was buying the ancient grains nuggies which were about $4 dollars a bag. Would appreciate any veggie's out there to suggest a good recipe to make our own seitan?

It is a complete dinner and for some reasons, chicken spells comfort to me :)

It was amazing and if the seitan or ancient grains are made right, the texture was perfect!!!!
