Mean Feed - Super quick red pepper pesto pasta 🍴

Now I do like to cook, and even more so when it takes only 10 minutes and it tastes so good you want to rub your face in it - or is that just me? 🤔

Ingredients:

250g linguine pasta
1 1/2 roasted red peppers
1 clove of garlic (peeled)
Small handful cashew nuts (you can use pine nuts, but cashews are cheaper)
A bunch basil (maybe 10 leaves)
Parmesan cheese (as much is needed for correct consistency and seasoning)

Get your water boiling and chuck the pasta in, don't forget to salt the water first.

Now throw everything except the parmesan cheese into a food processor and give it a decent whizz. Make sure the nuts and garlic are properly broken down or someone could get a very unpleasant mouthful.

Next grate the parmesan into the mixture loosely mix it in. Taste and season again if needed. Add a touch of olive oil if it's too heavy.

Now your pasta should be pretty much cooked, check it and heat another pan for the pesto. Once on medium heat, throw the pesto in and use tongs to put the linguine straight in, using the tongs to work the be pasta through the pesto - making sure it's all coated. As you haven't drained the pasta, the excess water will intensify the pesto flavour - just don't overdo it, no swimming! 😂

Now pop it on plate, add some extra parmesan, chopped basil and enjoy.

Oh and this recipe serves two greedy people.

I love making my own pesto, but I never considered making a pepper version though.

I sometimes add a few sundried tomatoes too - yummy!

Damn i love those too! Would add them to a pesto rosso!
