Enchilada I didn't say Potato?

Hi guys!

All of you reading this will know that finding the time to eat well, balance a social life and work all at the same time can be a bit overwhelming at times. I try and eat healthy when I can but I usually am impatient to cook anything that takes longer than 20 minutes which tends to minimize my choices.

But I may just have the thing for you below. It's easy, quick and fun: sweet potato enchiladas.

So let's keep it short and simple, and start with what you will need (to serve 2):

  • 2 Sweet Potatoes

  • 1 Package of feta cheese or roughly 200gms (more if you prefer)

  • 2 torillas

  • 2/3 of a mozarella (ball?) or pre-grated mozarella cheese

  • Chorizo (for you meat-eaters)

Start by cooking/boiling your potatoes. If you are super lazy like us, poke 'em with a fork and pop them into a microwave for 7 minutes with a bit of water.

While that's cooking, chop up everything else, start with chorizo, then the cheese.

Once you've chopped the chorizo, pop it in a pan for a few minutes so that it gets nice and crispy.

By this point the sweet potatoes should be done (to check poke it, it should be completely soft). Once it has cooled a bit, peel and it mash it with a fork or masher.

Once its nice and soft, start adding all the other ingredients.

In goes the chorizo, feta and mozzarella.

Feel free to experiment with this recipe, change it up so you can keep it interesting.

I would try adding some sun dried tomatoes or different types of cheeses to get different flavors.

It should be a big, heaping mess like below.

Once you've mixed it up well, put a little bit of oil in a heated pain and place 1 tortilla in it. Then on half the tortilla add the sweet potato/cheese mixture.

Let it cook for a bit, then fold over the other half of the tortilla creating a shell. After a minute or two, flip it over and let it sit for another minute or two.

Then it's done.

Slice this baby in half, serve it with some melted cheese on top and you are set for a super easy and quick meal.
